Beet
Packets
Wash
and trim beets, leaving root and one inch of stem. Place all beets in foil packet and bake
in the oven for about an hour, until a knife inserted near the top of the beet
goes in easily. Remove and open the
foil. When cool enough to handle,
rub the skin off with your thumbs.
Serve warm with butter, salt and pepper or cool on
salads.
