My father came through his surgery fine, and I was = glad I was there to help my mom, but I am sorry I missed meeting you last w= eek.  I will be here this week= and look forward to seeing all of you, but especially the new folks.  I thought this might be a good tim= e to explain a little about why I do what I do here at the farm.=

 

The reason I sell my produce through a CSA is becau= se of the “C” .  I= believe that community is what we all need, whether we know it or not.  We need to feel connected to oth= ers and this world we live in.  Farming is a good way to connect to the earth, as you are outside in the = midst of earth’s beauty and danger all day, observing and experiencin= g nature at work.  But farming= can be lonely work, especially on a small farm, such as Cane Creek Farm.  Selling shares in the farm to = a community of people who care about good food, and good health for people = and the earth is how I connect to people with like concerns and interests.<= span style=3D'mso-spacerun:yes'> 

 

You are a community of folks that receive a share o= f the harvest.  You share with others.  I divide t= he harvest up among those picking up and let you know how much you can get,= so that everyone gets a share. Leave your grocery store mentality at home = when you come to pick up and be open to trying a less than perfect tomato o= r pepper.  Be respectful of th= e other community members that will pick up after you. Talk to other shareh= olders and find out how they are preparing the food.

 

 Lesli= e, a new CSA shareholder who is working for her share, has expressed amazem= ent at the amount of work involved in getting those produce bins filled eve= ry week.  She helps for 4 hour= s every week.  Her comment was= that every shareholder should have to work for at least one morning to bet= ter understand what is involved.  I am mulling over that idea! Let me know what you think.

Suggestions and Recipes

 

More tomatoes this week and some recipes and ideas = about how to use them.  See th= e following box for a pesto recipe and one for fried green tomatoes.  Save the green tomato recipe for la= ter.  A tomato pie is another = way to use those fresh tomatoes.  Use a prepared crust, some mayonnaise, tomatoes, basil and cheese that = you bake for a delicious tomato tart. = ;

 

To cook spaghetti squash, half it, then bake or boi= l it till the flesh is soft and stringy.&n= bsp; Use a fork to remove the strands and serve as you would spaghet= ti.  You can dress it up with = tomato sauce or serve it simply with butter and parmesan cheese.  There are fewer calories and carbohydra= tes in this version of spaghetti!

 

I like to steam my okra for only a few minutes then= serve it as an appetizer or side dish with butter and lemon juice.  This is my very favorite way to eat = okra.  You can also cut it int= o rounds, then throw it into a hot  <= /span>pan coated with spray oil.  Stir it around for about five minutes till it starts to brown and seaso= n with your favorite seasoning (creole, Greek, garlic salt, etc.).

of the vegetable worl= d. CSA shareholders, count yourselves lucky,

because the tomatoes = coming your way are the best to be found:

they’re truly v= ine-ripened, juicy, sweet, and flavorful.

STORAGE<= o:p>

If your tomatoes smel= l fragrant and yield slightly when squeezed,

they are ready to use= . If not, store them for a few days at room temperature

until they are ripe. = Unless you have some very ripe tomatoes

near to spoiling, avo= id refrigerating them; cold temperatures

diminish their flavor= and texture.
